Prepare your fresh shrimp. First, cleanly cut off the heads. Then, using a toothpick or skewer, gently devein the shrimp by carefully scraping along the back near the second segment. This step is crucial for a cleaner, more refined flavor in your tempura.

Next, trim the transparent ‘water sac’ or tail vein located at the tip of the shrimp’s tail using kitchen scissors. Removing this part helps prevent oil splattering while frying and maintains a beautiful shape for your shrimp.

Lightly season the prepared shrimp with a tiny pinch of salt and a dash of black pepper for a subtle marinade. Be careful not to over-season, as this can affect the flavor of the tempura batter. A delicate seasoning is key.

In a wide bowl, place 6 tablespoons of tempura flour. Slowly add cold water while stirring with chopsticks, aiming for the right batter consistency. Mixing with chopsticks helps create a crispier batter. Avoid overmixing. Adding one or two ice cubes to the batter will keep it cold, resulting in an even crispier tempura. The batter should be thick enough to coat the shrimp but thin enough to drip slowly off a spoon.

Heat about 350ml of cooking oil in a deep pan over medium-high heat to approximately 170-180°C (340-350°F). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and float immediately. Carefully dip the seasoned shrimp into the tempura batter, ensuring they are well-coated. Gently place the battered shrimp into the hot oil, being careful not to overcrowd the pan. Stir occasionally to ensure even cooking. Fry until golden brown and crispy. Your delicious homemade shrimp tempura is ready!
