Cooking Instructions
Step 1
First, peel the 2 potatoes designated for the potato chips. Then, slice them as thinly as possible. The thinner the slices, the crispier your homemade chips will be, mimicking the texture of store-bought ones. Use a mandoline slicer or a sharp knife for even slices.

Next, peel the 4 potatoes for the french fries. Cut them into your desired french fry shape. The thickness is up to your preference; typically, about 1cm thick fries offer a great balance of a crispy exterior and a soft interior.
Step 3
Now, place both the potato chip slices and the french fry sticks in separate bowls of cold water. Let them soak for at least 30 minutes to remove excess starch. This step is crucial for preventing them from sticking together and ensuring maximum crispiness. You can change the water once or twice during soaking for better results.
Step 4
In a pot, bring 700ml of water to a boil and add 1/2 tablespoon of salt to season the water. Once the water is at a rolling boil, carefully add the potato slices for the chips. Blanch them for only about 3 minutes. Be careful not to overcook them, as they can become mushy and break apart. Immediately remove them from the water and drain well.
Step 5
Using the same boiling water, add the potato sticks for the french fries. Boil them for approximately 6 minutes. The french fries need to be cooked a bit longer than the chips to ensure the inside is tender. Drain them thoroughly after cooking.

After blanching or boiling, thoroughly pat dry both batches of potatoes with paper towels. Removing excess moisture is key to achieving a crispy fry and preventing oil splatter. Make sure they are as dry as possible.

In a deep pot or a frying pan, heat a generous amount of cooking oil. Aim for a temperature of around 170-180°C (340-350°F). Once the oil is hot, carefully add the dried potato slices for the chips.

Fry the potato chips, stirring occasionally to prevent them from sticking, until they turn golden brown and slightly crisp around the edges. They should look and feel like commercial potato chips.

Once perfectly golden and crispy, remove the potato chips from the oil. While they are still hot, sprinkle them with a pinch of salt and a pinch of black pepper. For an extra touch of flavor, you can add a pinch of dried parsley (optional). Your delicious homemade potato chips are now ready!

Before frying the french fries, place the dried potato sticks in a plastic bag and add 2 tablespoons of potato starch. Shake the bag well to coat the fries evenly.
