Brine and Frying

  • 500ml water
  • 30g salt (approx. 2 Tbsp)
  • 20g cooking oil (approx. 1.5 Tbsp)

Start with a fresh potato. First, rinse the potato under cold water once or twice to gently remove any dirt or debris. This step is done before peeling to ensure the potato’s surface is clean.

Peel the potato thoroughly. Use a peeler or knife to thinly remove the skin. After peeling, place the potato back in cold water for about 10 minutes to remove excess starch. This soaking process helps make the chips crispier.

Slice the potato thinly. Aim for a thickness of about 1-2mm; the thinner the slices, the crispier your chips will be. A mandoline slicer or a vegetable peeler can make this easier. Prepare the brine by dissolving 30g of salt in 500ml of cold water. Soak the sliced potatoes in this brine for 15 minutes to draw out starch and season them. Afterward, drain the potatoes thoroughly in a colander and pat them completely dry with paper towels. Removing as much moisture as possible prevents oil splatter and contributes to extra crispiness.

Heat the cooking oil in a frying pan over medium-low heat. Arrange the dried potato slices in a single layer, ensuring they don’t overlap. Pan-fry them until golden brown and crispy on both sides. Adjust the cooking time based on the thickness of your potato slices. Be careful not to burn them. Once they reach a beautiful golden-brown color, your delicious homemade potato chips are ready! They are wonderful served warm, or you can let them cool completely for an even crunchier texture.
