Blanching the Ribs- Bay leaf, 1

Cooking Instructions
Step 1
First, it’s important to thoroughly remove the blood from the pork ribs. Soak the ribs in cold water for about 30 minutes to an hour, changing the water occasionally to help draw out the blood. This step is crucial for a clean flavor without any gamey taste.
Step 2
After draining, make shallow cuts along the bones of the ribs with a knife. These cuts will help the sauce penetrate deeply into the meat, making the final dish much more flavorful. Simply score along the meat attached to the bones.
Step 3
In a large pot, bring plenty of water to a rolling boil. Once boiling, add the blanching ingredients: 1 bay leaf, 2 Tbsp of cheongju (or cooking sake), and 2 Tbsp of soy sauce. Add the prepared ribs and blanch for about 5-7 minutes. This process removes any impurities and unwanted odors from the ribs.
Step 4
Remove the blanched ribs from the pot and drain them well. Place the ribs in a bowl and toss with 3 Tbsp of starch, ensuring a light coating on the surface. This starch coating will help seal in the juices, resulting in tender meat inside and a crispy exterior after frying.

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Add the starch-coated ribs and pan-fry until golden brown on all sides. Continue to cook slowly until the exterior becomes nicely crisp. This step enhances the overall texture of the ribs.

To further crisp the ribs and remove excess oil, transfer them to an air fryer. Set the air fryer to 180°C (350°F) and cook for 13 minutes. If you don’t have an air fryer, you can use an oven or a microwave. This step ensures the ribs are perfectly cooked, tender on the inside, and delightfully crispy on the outside.

In a small bowl, combine 2 Tbsp of soy sauce, 1 Tbsp of oyster sauce, 3 Tbsp of sugar, 2 Tbsp of cooking wine, 1 Tbsp of ginger wine (or minced ginger), 1 Tbsp of balsamic vinegar, 1 Tbsp of minced garlic, and a pinch of black pepper.
