Crispy Homemade Hash Browns

Main Ingredients
- 4 Potatoes (medium-sized)
- 2 Tbsp Starch Powder (potato starch or cornstarch)
- 1 tsp Curry Powder (for extra flavor!)
- 1/2 tsp Salt
- 3-4 Tbsp Cooking Oil (for frying)
Cooking Instructions
Step 1
Peel two of the potatoes and slice them into 0.5cm thick half-moons. Wash the remaining two potatoes thoroughly (keeping the skin on) and cut them into roughly 1cm cubes. This ensures even cooking and a better texture.
Step 2
Place all the cut potatoes into a microwave-safe container. Cover with plastic wrap and poke a few holes with a fork. Microwave for 3-4 minutes until the potatoes are tender. (Adjust cooking time based on your microwave’s power).
Step 3
Once removed from the microwave, use a fork or a potato masher to gently mash the larger, sliced potato pieces until smooth. The cubed potatoes can be left as they are for a bit of bite.
Step 4
Add 2 Tbsp of starch powder, 1 tsp of curry powder, and 1/2 tsp of salt to the mashed potatoes. Mix everything thoroughly until well combined. If the mixture feels too wet, you can add a little more starch powder.
Step 5
Heat about 3-4 Tbsp of cooking oil in a preheated frying pan over medium-low heat. Spoon portions of the potato mixture into the pan and flatten them into your desired shape (round or flat). Fry for about 5-7 minutes per side, until golden brown and crispy. Your delicious homemade hash browns are ready!
