Chicken Ingredients

  • 600g chicken (tenderloin or your preferred cut)
  • Pinch of salt
  • Pinch of black pepper
  • 200g store-bought fried chicken mix
  • 340ml cold water
  • 150g breadcrumbs
  • 1 Tbsp dried parsley flakes
  • Plenty of cooking oil for deep-frying

Cooking Instructions

Step 1

First, prepare 600g of chicken. Chicken tenderloin is tender and easy to eat, but you can use other cuts if you prefer. Season the chicken evenly with salt and pepper. Let it marinate for about 30 minutes to allow the flavors to penetrate deeply, making it even more delicious.

To create a crispy coating, prepare the batter. In a bowl, combine 200g of the store-bought fried chicken mix with 340ml of cold water. Mix well until you have a slightly thin batter that will coat the chicken lightly. Ensure there are no lumps for a smooth texture.

Prepare the breadcrumb coating. In a separate shallow dish, mix 150g of breadcrumbs with 1 Tbsp of dried parsley flakes. Stir thoroughly. The parsley will add flavor and give the chicken a more appealing appearance.

Now, get ready for frying. Pour enough cooking oil into a deep pan or pot for deep-frying and preheat it to 160°C (320°F). You can use a thermometer or test the oil by dropping a small piece of breadcrumb; it should sizzle and float immediately. If the oil is too hot, the outside will burn before the inside is cooked, so maintaining the correct temperature is crucial.

Dip the marinated chicken pieces into the prepared batter. Ensure each piece is evenly coated with the batter. This is the first layer of coating.

Next, take the battered chicken pieces and transfer them to the parsley breadcrumb mixture. Gently press the breadcrumbs onto the chicken to ensure a thorough and even coating. This second layer is key to achieving that satisfying crunch.

For maximum crispiness, we’ll fry the chicken in two stages. Carefully place the breaded chicken pieces into the preheated 160°C oil and fry for about 5 minutes for the first fry. They should be lightly golden. Remove the chicken from the oil and let it drain thoroughly.

Return the par-fried chicken to the 160°C oil for the second fry. This time, fry until the chicken is a deeper golden brown than in the first fry, indicating it’s cooked through and beautifully crisped. Your homemade fried chicken is now complete! Enjoy this delicious, crispy treat!
