First, thoroughly wash the 2 potatoes you’ll be using. You can leave the skins on for extra texture and nutrients, or peel them if you prefer.

Here’s a handy trick for slicing the potatoes thinly! Place one potato between two wooden chopsticks. When you slice, the chopsticks act as a guide, ensuring your slices are only as thick as the chopsticks themselves, resulting in uniform chip-like pieces. Aim for slices about 2-3mm thick.

Soak the sliced potatoes in cold water to remove excess starch – this step is crucial for extra crispiness! Let them soak for about 10 minutes, then drain and pat them thoroughly dry with paper towels. Dry potato slices help the sauce adhere better and prevent burning.
