I’ve made countless potato dishes, but today I’m sharing one of the simplest and most delicious recipes I’ve ever tried. Get ready for homemade potato chips that are perfectly crispy on the outside and tender on the inside!

Ingredients

  • 2 medium potatoes
  • 1 tablespoon salt
  • A pinch of dried parsley flakes (optional)

Cooking Instructions

Step 1

Begin by thoroughly washing the potatoes. Since we’re keeping the skins on for extra flavor and texture, scrub them well to remove any dirt. Next, slice the potatoes into uniform rounds, about 2-3mm thick. This consistent thickness is crucial for even cooking – too thick and they won’t crisp up, too thin and they might burn. Using a mandoline slicer or a good knife will help achieve this.

Sprinkle the sliced potatoes evenly with 1 tablespoon of salt. The salt will help draw out moisture from the potatoes, leading to a crispier result. Let them sit undisturbed for about 10 minutes, allowing the salt to work its magic.

After 10 minutes, the potato slices should feel slightly pliable and bendable. Gently rinse the potato slices under cold running water to remove the excess salt. It’s extremely important to pat them completely dry with paper towels or a clean kitchen towel. Any remaining moisture can cause them to steam rather than crisp up properly.

Arrange the dried potato slices in a single layer in your air fryer basket, ensuring they don’t overlap. Air fry at 180°C (350°F) for 10 minutes. After 10 minutes, carefully flip the slices. For extra flavor and crispness, you can lightly brush or spray them with olive oil. Continue to air fry for another 10 minutes, or until golden brown and crispy.

Once perfectly crisp, transfer the potato chips to a serving bowl. Sprinkle with a tiny bit more salt if desired, and a pinch of dried parsley flakes for a lovely aroma and color. Enjoy your delicious homemade potato chips immediately while they’re warm and at their crunchiest!
