Halibut Patty Ingredients

  • 400g fresh halibut fillet
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 1 tsp cornstarch
  • 2 eggs (whites only)
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs

Sandwich Assembly Ingredients

  • 2 slices of bread
  • 100g cabbage (thinly shredded)
  • 50g pickles (finely chopped)
  • 2g butter (for pan coating)

Sweet & Tangy Sauce

  • 1/2 tsp strawberry jam
  • 1/2 tsp ketchup
  • 1 tsp mayonnaise
  • 1/2 tsp whole grain mustard

First, prepare the fresh halibut fillet by cleaning it thoroughly. Finely mince the fish using the side of a knife or a food processor. Season the minced halibut with a pinch of salt and white pepper. In a bowl, add 1 teaspoon of cornstarch and the egg whites (reserving the yolks for another use). Mix these ingredients with the seasoned halibut. Be sure to drain any excess moisture from the fish to prevent the mixture from becoming too wet and sticky. This step is crucial for achieving a firm patty texture.

Now, let’s coat the halibut mixture. First, lightly dust the halibut mixture with all-purpose flour. Next, dip it into the egg whites (or the whole beaten egg if preferred) and then coat it generously with breadcrumbs. If you don’t have breadcrumbs, you can finely process some bread into crumbs. While coating, shape the mixture into patties of your desired size. Aim for a consistent thickness; patties that are too thick may not cook through evenly, while very thin ones can become dry.

Prepare to fry the patties. Heat a generous amount of cooking oil in a pan to approximately 165°C (325°F). Carefully place the halibut patties into the hot oil. Fry for about 3-4 minutes, or until they are golden brown and crispy. Remove the fried patties and place them on a wire rack or paper towels to drain excess oil. In another pan, melt the butter over medium heat. Toast the bread slices (with crusts removed, if desired) until golden brown and slightly crisp. Prepare a fried egg for each sandwich, cooked to your preference (a runny yolk is recommended).
