Crispy Grilled Cod Steak
Crispy on the outside, tender on the inside! Codfish Grilled with Soy Sauce Glaze
We’ll make a ‘Codfish Steak’ by grilling cod until crispy and drizzling it with a sweet and savory soy sauce glaze. This dish is perfect as a main course. Enjoy a delicious codfish steak that’s sure to impress!
Main Ingredients- 2 pieces prepared dried cod (kodari)
- 1/2 tsp salt
- 1/2 tsp ginger powder
- 4 Tbsp potato starch (or cornstarch)
- 4 Tbsp cooking oil (for frying)
Soy Glaze Sauce- 4 Tbsp soy sauce
- 2 Tbsp water
- 1/2 Tbsp sugar
- 3 Tbsp corn syrup (or honey)
- 2 Tbsp cooking wine (mirin)
- 1 tsp toasted sesame seeds
- 1/4 onion (finely minced)
- 2 stalks green onion (chopped)
Aromatic Garlic Chili Oil- 5 cloves garlic (thinly sliced)
- 1 chili pepper (seeds removed and finely minced)
- 3 Tbsp cooking oil
- 4 Tbsp soy sauce
- 2 Tbsp water
- 1/2 Tbsp sugar
- 3 Tbsp corn syrup (or honey)
- 2 Tbsp cooking wine (mirin)
- 1 tsp toasted sesame seeds
- 1/4 onion (finely minced)
- 2 stalks green onion (chopped)
Aromatic Garlic Chili Oil- 5 cloves garlic (thinly sliced)
- 1 chili pepper (seeds removed and finely minced)
- 3 Tbsp cooking oil
Cooking Instructions
Step 1
Thoroughly clean the two dried codfish pieces, removing any fins, head, and tail. Rinse them under running water and cut them into 4 manageable pieces.
Step 2
Make 2-3 shallow cuts into the fleshy part of each cod piece. Gently open the cuts with your fingers and carefully remove any bones or small pin bones for easier eating. Season both sides evenly with 1/2 tsp salt and 1/2 tsp ginger powder, and let it marinate for about 10 minutes.
Step 3
Prepare the vegetables for the sauce and garlic oil. Thinly slice 5 cloves of garlic. Finely chop 2 stalks of green onion. For the onion, first slice it vertically, then horizontally to create fine mince. Finely mince 1 chili pepper after removing the seeds for a touch of heat. (You can substitute with bird’s eye chili if preferred.)
Step 4
Spread 4 Tbsp of potato starch evenly onto a plate. Lightly pat the marinated cod pieces dry, then coat both sides thoroughly with the starch. This coating will help create a wonderfully crispy texture.
Step 5
In a bowl, combine all the ingredients for the soy glaze sauce. Add 4 Tbsp soy sauce, 1/2 Tbsp sugar, 3 Tbsp corn syrup, 2 Tbsp water, and 2 Tbsp cooking wine (mirin). Stir well until the sugar is dissolved, preparing your flavorful glaze.
Step 6
Heat 3 Tbsp of cooking oil in a frying pan over medium heat. Add the sliced garlic and minced chili pepper, and sauté until fragrant to create an aromatic garlic chili oil. Be careful not to burn the garlic; cook until it’s lightly golden.
Step 7
Carefully remove the fragrant fried garlic slices from the pan and set them aside on a plate. These can be used as a garnish or enjoyed alongside the dish.
Step 8
Pour the prepared soy glaze sauce into the same pan used for the garlic oil. Bring the sauce to a simmer, then add the minced onion and chopped green onion. Reduce the heat to medium-low and let it simmer until the sauce reduces by about half, thickening to a nice consistency.
Step 9
In a separate frying pan, heat a generous amount of cooking oil (about two drizzles) over medium heat. Carefully place the starch-coated cod pieces into the hot oil. Fry them on both sides until they are golden brown and crispy. Ensure the inside remains moist and tender.
Step 10
Arrange the reserved fried garlic slices on the serving plate. Place the crispy fried cod pieces neatly on top of the garlic. Generously drizzle the reduced soy glaze sauce all over the cod. Finally, sprinkle with toasted sesame seeds for a beautiful finish. Your ‘Codfish Steak’ is now ready – a true ‘rice thief’ that requires no other side dishes! It’s a complete and satisfying main course.
