Hello everyone! The weekend flew by so quickly. It’s quite chilly today with a lot of wind. Coincidentally, pork belly was on sale, so I bought plenty. Weekend evenings are meant for grilling meat, right! Since I was short on greens for wraps, I quickly whipped up a delicious green onion salad. You can make an even tastier green onion salad at home than the one you get as a service from the butcher! I was disappointed that the supermarket didn’t offer sliced green onions, but making it myself is so much better!

The ingredients for the green onion salad dressing are listed above. First, let’s prepare the green onions. Wash the large green onions thoroughly under running water. After removing excess water, cut them into 2-3 sections to make slicing easier.

If you have a green onion slicer, it’s convenient, but it’s perfectly fine if you don’t! Rolling the green onions tightly makes them much easier to slice. This way, the onions won’t move around, allowing for safe and uniform cuts.

Slice the rolled green onions to your desired thickness. It’s easier to get thin, even slices if you roll the firmer, less slippery outer parts of the green onion. Slicing them as thinly as possible will enhance their crispiness and help them absorb the dressing better, making them more delicious. You can adjust the thickness to your preference, but thinner is generally tastier!

Place the sliced green onions directly into a bowl. We’ll now proceed to make the dressing. If you have ‘Cham Sauce’ at home, feel free to use it! I kept the one I got from the butcher, and it’s accumulated quite a bit. ‘Cham Sauce’ is a great ingredient for adding umami to your green onion salad.

Making the green onion salad dressing is incredibly simple. Add 3-4 tablespoons of ‘Cham Sauce’ to the green onions in the bowl. Then, add 1-2 tablespoons of gochugaru (adjust to your spice preference), 1 tablespoon of sesame oil, and 1 tablespoon of sesame seeds. If you don’t have ‘Cham Sauce,’ you can mix 2 tablespoons of soy sauce, 1 tablespoon of vinegar, and 1/2 tablespoon of sugar instead. Gently toss everything together with your hands. And just like that, a delicious green onion dressing is ready!
