Main Ingredients
  • 1 large Kohlrabi
  • 1/2 bunch Spring Green Onions

Seasoning
  • 1 Tbsp Salt (for salting kohlrabi)
  • 1-2 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
  • 1 tsp Minced Garlic
  • 1.5 Tbsp Fish Sauce (anchovy or sand lance)
  • 1 tsp Sugar (adjust sweetness)
  • A pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

Prepare one large kohlrabi, about the size of a large soup bowl. Carefully peel off the skin with a knife. After peeling, wash it thoroughly.

Step 2

Trim and wash the fresh spring green onions. Shake off excess water. Cut them into approximately 3-4 cm lengths. If the white parts are thick, slice them in half lengthwise. If they are small and tender, you can leave them as they are.

Step 3

Julienne the kohlrabi into thin strips, similar to how you would prepare radish for a salad. Be cautious while cutting, as kohlrabi is firmer than radish.

Step 4

Add 1 tablespoon of salt to the julienned kohlrabi and mix well. Let it sit for about 5-10 minutes to salt and soften slightly, making it crisp.

Step 5

Squeeze out the excess water from the salted kohlrabi by hand. It’s important not to rinse the kohlrabi; just squeeze out the water to allow the seasonings to adhere better.

Step 6

In a bowl with the squeezed kohlrabi, add all the seasoning ingredients (gochugaru, minced garlic, fish sauce, sugar). Gently mix and toss to coat. Adjust the sweetness to your preference, considering the kohlrabi’s natural sweetness and its slight saltiness from being salted. Taste and adjust if necessary.

Step 7

Add the prepared green onions to the seasoned kohlrabi and gently toss them together. Avoid overmixing to keep the green onions fresh and vibrant.

Step 8

Your delicious kohlrabi and green onion salad is ready! It offers a delightful crunch from the kohlrabi and a refreshing aroma from the green onions. Unlike radish salad, kohlrabi provides a satisfying chew and doesn’t release too much water, making it an excellent side dish that can be stored for a few days.
