First, to remove any fishy smell and make the anchovies more savory, place them in a dry pan over medium-low heat and stir-fry for 2-3 minutes. As they warm up, the moisture will evaporate, making them crispier. Set the roasted anchovies aside in a separate bowl for now.

Wash the garlic scapes thoroughly. Then, blanch them in boiling water with a pinch of salt (optional) for just about 30 seconds. Be careful not to overcook them, or they will become mushy. Rinse the blanched garlic scapes under cold water, drain them completely, and cut them into bite-sized pieces (about 3-4 cm long).
