  • Garlic scapes 1 bunch (approx. 15-20 stalks)
  • Starch (potato or corn) as needed
  • Cooking oil (olive oil or vegetable oil) a little

Garlic Scape Pork Roll Sauce

  • Soy sauce 4 Tbsp
  • Cooking syrup (or corn syrup/oligo syrup) 2 Tbsp
  • Sugar 1/2 Tbsp
  • Cooking wine (Mirin) 2 Tbsp
  • Plum extract 1 Tbsp
  • Water 2 Tbsp
  • Minced garlic 1/2 Tbsp
  • Toasted sesame seeds 1 Tbsp
  • Black pepper a pinch

Cooking Instructions

First, prepare the fresh garlic scapes. Trim off about 1cm from the tough ends, then rinse them thoroughly under running water to remove any dirt or debris.

Gently pat the washed garlic scapes dry with a paper towel. Then, cut them into uniform lengths of about 7cm. Cutting them to a suitable length will make them easier to roll.

Spread the pork slices thinly. Using thinly sliced pork meant for bulgogi or shabu-shabu works best as it’s easier to cook. Lightly coat both sides of the pork with starch. This helps the sauce adhere better and keeps the juices in. Now, place about 3 garlic scape stalks neatly on one end of a pork slice. Adjust the number of garlic scapes based on the size of the pork.

Starting from the end with the garlic scapes, carefully but tightly roll the pork around the scapes. Ensure you roll it snugly so the pork doesn’t unravel.

Repeat this process to wrap all the remaining garlic scapes with pork, creating neat rolls. You’ll have plump pork and garlic scape rolls ready.

Now, let’s make the delicious sauce. In a bowl, combine the soy sauce, cooking syrup, sugar, cooking wine, plum extract, water, minced garlic, toasted sesame seeds, and pepper. Mix thoroughly until the sugar is dissolved.

Heat a generous amount of cooking oil in a pan over medium heat. Place the prepared garlic scape pork rolls in the hot pan. Crucially, place them seam-side down first. As the pork cooks and shrinks, it will help seal the seam, maintaining a beautiful shape. Cook over medium-low heat, turning gently.

Continue to cook the pork rolls, turning them occasionally, until all sides are golden brown and cooked through. A slightly crispy exterior adds to the deliciousness.
