Crispy Garlic Anchovy Stir-fry Recipe

I’ll share my secret tips for making anchovy stir-fry that’s irresistibly crispy and savory, without any fishy smell from start to finish. By adding whole garlic cloves, we’ll create a chewy and sweet dimension, making this a truly irresistible side dish for your meals!
Main Ingredients- 90g small dried anchovies
- 100g whole garlic cloves
- 2 Tbsp cooking oil
Seasoning- 1 Tbsp mayonnaise
- 1 Tbsp soy sauce
- 1 Tbsp cooking wine (e.g., Mirin)
- 2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (or crushed sesame seeds)
- 1 Tbsp mayonnaise
- 1 Tbsp soy sauce
- 1 Tbsp cooking wine (e.g., Mirin)
- 2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (or crushed sesame seeds)
Cooking Instructions
Step 1
1. First, prepare the small dried anchovies. 2. Place the anchovies in a dry pan preheated over medium heat and stir-fry them without any oil. (Dry roasting) 3. Take a few anchovies and taste them; once they are crispy and lightly browned, turn off the heat. Roasting the anchovies thoroughly will eliminate any fishy odor and keep them wonderfully crisp even after some time.
Step 2
Transfer the well-roasted anchovies to a clean bowl. Lightly tap or discard any anchovy crumbs stuck to the bottom of the pan, and rinse the pan with water. (This prevents residue from burning.)
Step 3
1. Place the rinsed pan back on medium heat and add 2 tablespoons of cooking oil. 2. Add the whole garlic cloves to the pan and stir-fry. 3. Once the garlic starts to turn golden brown, briefly turn off the heat. Then, add all the prepared seasoning ingredients (mayonnaise, soy sauce, cooking wine, oligosaccharide). 4. Adjust the heat to medium-low and let the mixture simmer until it bubbles vigorously.
Step 4
After the sauce comes to a boil, continue to simmer for about 30 seconds more. Simmering the sauce like this helps the garlic absorb the flavors beautifully and adds a glossy finish.
Step 5
Add the pre-roasted crispy anchovies to the pan and quickly toss to coat them evenly with the sauce. Since the anchovies are already thoroughly roasted, you only need to mix them gently without overcooking.
Step 6
Finally, add 1 tablespoon of sesame oil and 1 tablespoon of sesame seeds, and give it a quick toss. Your delicious Garlic Anchovy Stir-fry is now complete!
