Crispy Fried Pork Kimbap
Achieving the ‘Golmok Sikdang’ Square Kimbap with Crispy Fried Pork!
Create a special kimbap featuring crispy fried pork with a tender inside! This recipe is inspired by the ‘Golmok Sikdang’ square kimbap, offering a delicious homemade version. Perfect for kids’ snacks or a special meal.
Fried Pork Ingredients- 300g Pork Shoulder

Step 1
Let’s start by making a delicious tartar sauce. In a bowl, combine 3 tablespoons of mayonnaise with 1 tablespoon of chopped pickles, 1 teaspoon of sugar, a pinch of salt, a pinch of black pepper, and 1 teaspoon of lemon juice. Mix well. This sauce is fantastic with fried shrimp or fish too!
Step 2
Cut the pork shoulder into bite-sized pieces. Season the pork generously with a pinch of salt and pepper. This initial seasoning will enhance the pork’s natural flavor.
Step 3
Now, let’s prepare the frying batter. In a bowl, mix 1 cup of frying powder with 1 cup of cold water using chopsticks. Stir gently, avoiding overmixing, as this is key to achieving a thin and crispy coating! The batter should be on the runnier side; if it’s too thick, the coating will become heavy. Refer to the video for the ideal consistency. This simple batter is much easier than dealing with eggs and breadcrumbs, making it feel more accessible than making tonkatsu.
Step 4
Lightly coat the seasoned pork pieces with the frying batter. Heat oil in a pan to 170-180°C (338-356°F). Carefully place the battered pork into the hot oil. Adjust the temperature based on the thickness of the pork: use 170°C for thicker pieces and a slightly higher temperature for thinner ones to ensure they cook evenly. They’ll already smell delicious enough to eat as is!
Step 5
For an extra crispy texture, we recommend frying the pork twice. Fry the pork until lightly golden, remove it from the oil, let it rest for a minute, and then fry it again. This double-frying process ensures a wonderfully crisp exterior. If you don’t eat pork, feel free to substitute with beef or chicken; it will still be delicious!
Step 6
Time to assemble the kimbap! Place a sheet of dried seaweed with the rough side facing up. Spread the cooked rice thinly over the seaweed. Lay a perilla leaf on top of the rice, then generously place the crispy fried pork. Drizzle the prepared tartar sauce over the pork.
