Crispy Fried Dried Filefish
Perfect for a Snack! Bite-Sized & Delicious Fried Dried Filefish*
Introducing a recipe for delicious fried dried filefish that’s crispy on the outside and chewy on the inside, perfect as a beer snack or for kids! It’s easy to make without any special ingredients.
Ingredients- 2 sheets dried filefish (prepare extra if you like)
- 4 Tbsp tempura flour
- 200ml water (approx. 1 cup)
- Cooking oil (generous amount for deep frying)
Cooking Instructions
Step 1
First, cut the dried filefish into bite-sized pieces. Using scissors to cut them into smaller pieces makes them easier for children to eat.
Step 2
In a bowl, combine 4 Tbsp of tempura flour with 200ml of cold water. Whisk with a whisk or chopsticks until smooth, ensuring there are no lumps. The batter should be thick enough to coat but still flowable, not too watery.
Step 3
Dip the prepared dried filefish pieces into the tempura batter, coating them evenly. Since dried filefish has very little moisture, you don’t need to coat them with dry flour first; just dip them directly into the batter.
Step 4
Heat a generous amount of cooking oil in a pan over medium-high heat until it reaches about 170-180°C (340-350°F). You can test the temperature by inserting a wooden chopstick; if small bubbles form around it, the oil is ready. Carefully place the battered filefish pieces into the hot oil. Fry them, turning occasionally, until they are golden brown and crispy. Frying over medium heat rather than high heat ensures they cook through without burning and become wonderfully crisp. Drain on paper towels to remove excess oil for maximum crispiness.
