  • 1 bunch fresh celery (approx. 300-400g)
  • 10 Korean green chili peppers (for a touch of spice)

Golden Ratio Brine (Pickling Liquid)

  • 2 cups soy sauce or seasoned soy sauce (400ml)
  • 2 cups vinegar (400ml)
  • 1 cup white sugar (200g)
  • 1/2 cup water (100ml)
  • 1 tablespoon salt (15g)

Cooking Instructions

Thoroughly wash the fresh celery under cold running water to remove any dirt or impurities. If the outer leaves are wilted or discolored, feel free to remove them for better quality.

After washing, shake off excess water from the celery. Then, cut it into bite-sized pieces, about 2-3 cm long. Cutting them slightly larger will help retain a satisfying crunch.

Prepare the Korean green chili peppers by removing their stems and washing them. You can roughly chop them or slice them diagonally, depending on your preference. If you want to reduce the spiciness, remove the seeds before chopping.

Place the cut celery in a colander and pour hot water over it. This step helps to maintain the celery’s crispiness while sanitizing it and reducing the pickling time. Drain the water immediately after pouring the hot water.

Prepare a glass jar or an airtight container for pickling. Sterilizing it by boiling in hot water and then drying thoroughly will ensure hygiene. Arrange the drained celery and chopped chili peppers attractively in the sterilized container.

Now, let’s make the delicious pickling brine. In a saucepan, combine 2 cups of soy sauce, 2 cups of vinegar, 1 cup of sugar, 1/2 cup of water, and 1 tablespoon of salt. Heat over medium heat, stirring until the sugar and salt are dissolved. Once the liquid begins to boil, immediately turn off the heat. There’s no need to boil it for an extended period.

Pour the freshly boiled, hot brine over the celery and chili peppers in the container. Pouring it while it’s hot helps the celery stay crisp and allows the brine to penetrate the ingredients effectively. Ensure the ingredients are fully submerged in the liquid. Then, immediately close the lid tightly to seal it. It’s crucial to prevent any steam from escaping.

Let the container sit at room temperature for about half a day to allow the flavors to meld. Afterward, refrigerate for another two and a half days for a more developed and richer flavor. The resting time can be adjusted according to your preference.
