Ingredients- 2 medium potatoes
- 1/2 medium onion
- 3 Tbsp pancake mix (or all-purpose flour)
- 3 Tbsp canned corn kernels
- 1 egg yolk
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, thoroughly wash the potatoes and onion. You can peel the potatoes or scrub them clean if you prefer to keep the skin on. Prepare them for slicing.
Step 2
Now, slice the potatoes as thinly as possible. Using a mandoline slicer or a grater can help you achieve uniform, thin slices, which is ideal for achieving a crispy texture.
Step 3
Once thinly sliced, cut the potatoes into very fine julienne strips (matchsticks). The thinner the strips, the crispier your pancakes will be when cooked.
Step 4
Cut the onion in half, then thinly slice it into julienne strips, similar in thickness to the potato strips. This helps ensure even cooking.
Step 5
In a mixing bowl, combine the julienned potatoes and onions. Add the canned corn kernels, pancake mix, and the egg yolk. Mix everything together until well combined. The pancake mix will act as a binder.
Step 6
Season the mixture with a pinch of salt and pepper. Adjust the salt to your taste, as too much can make the pancakes overly salty. Mix thoroughly to ensure all ingredients are evenly distributed in the batter.
Step 7
Heat a frying pan over medium heat and add enough cooking oil to coat the bottom. Spoon portions of the batter into the hot pan, spreading them out thinly and shaping them into small, round pancakes. Aim for about 2-3 inches in diameter.
Step 8
Once the edges of the pancakes start to turn golden brown, carefully flip them over with a spatula. Cook the other side until it’s also golden brown and crispy. Keep an eye on the heat to prevent burning.
Step 9
And there you have it! Wonderfully crispy on the outside and tender on the inside, these potato pancakes are ready to be enjoyed. They look as good as they taste and are sure to be a hit with everyone.
Step 10
These are best served warm right off the pan! For an extra flavor boost, try serving them with ketchup, a sweet chili sauce, or a dollop of sour cream. Adding a slice of cheese on top and letting it melt is also highly recommended for an even richer taste!
