Ingredients

  • 5 medium-sized potatoes
  • 2 Tbsp cornstarch or potato starch
  • A pinch of black pepper

Cooking Instructions

Step 1

Start by preparing your potatoes. Peel them, wash thoroughly under running water, and cut them into large chunks. Place the potato pieces in a pot and cover with enough water to submerge them. Boil over medium heat until completely soft and easily mashable with a fork. This is a crucial step for achieving a fluffy interior. Once cooked, drain the potatoes thoroughly to remove all excess water. While still warm, transfer them to a large bowl and mash them finely using a fork or a potato masher. Ensure there are no lumps for a smooth texture.

Step 2

To the mashed potatoes, add 2 tablespoons of starch and a pinch of black pepper to your liking. (Optional: You can also add a little dried parsley for extra flavor and color.) Now, gently knead the mixture with your hands until all ingredients are well combined. The dough should be firm enough to shape, not too sticky. You can form them into bite-sized balls or elongated fries. If the mixture is too dry, add a tiny bit more starch; if it’s too wet, add a bit more starch until you achieve a workable consistency. Shape the dough into your desired fry shapes.

Step 3

Heat a generous amount of cooking oil in a deep pan or fryer to about 170°C (340°F). If you don’t have a thermometer, you can test the oil by dropping a small piece of the potato mixture; it should sizzle and float to the surface. Carefully add the shaped potato pieces to the hot oil, being careful not to overcrowd the pan. Fry in batches if necessary to maintain the oil temperature. Cook for about 5-7 minutes, or until the fries are golden brown and crispy on the outside. Remove the fries with a slotted spoon and drain them on a paper towel-lined plate. Serve immediately for the best crispy and fluffy experience!
