Enjoy a fantastic beer snack made from a single bag of enoki mushrooms, costing only 500 won! These enoki mushroom fritters are wonderfully crispy on the outside and chewy on the inside, with a subtle sweetness that unfolds with every bite. Especially when skewered with chili peppers, they create a visually appealing dish that resembles small trees. While the video used both red and green chili peppers for vibrant color, today we’re using the green ones we have on hand. (I’ve included screenshots from the video for reference!) They say anything deep-fried is delicious, but enoki mushroom fritters are truly among the best. Coating them generously in breadcrumbs makes them even more substantial and wonderfully crispy. They are perfect when paired with a cold glass of Tsingtao beer! Main Ingredients- 1 bag Enoki mushrooms
- 2 crisp chili peppers (like Korean ‘asagochyu’)
- 1 cup Breadcrumbs
- 1 pinch Salt
- 200ml Cooking oil (for deep-frying)

- 4-5 Ice cubes
- 1 cup Water

Cooking Instructions
Step 1
First, trim the base of the enoki mushroom bag. This helps keep the mushrooms intact and maintain their shape while you prepare them.
Step 2
Carefully split the enoki mushrooms in half. It’s important to divide them into portions that can be skewered onto the chili peppers. Be careful not to split them too thinly.
Step 3
Lightly sprinkle a pinch of salt over the prepared enoki mushrooms. This provides a subtle seasoning that enhances the overall flavor of the fritters.

Wash the crisp chili peppers and slice them into pieces about 1 cm long. Cut each chili pepper in half lengthwise and remove the seeds to make it easier to skewer the enoki mushrooms. (Tip: Using both red and green chili peppers adds a beautiful visual appeal. You can easily remove the seeds using a spoon or chopsticks.)

Sprinkle about 1 tablespoon of tempura flour evenly over the seasoned enoki mushrooms. This flour coating helps the batter adhere better, preventing the mushrooms from falling apart during frying and ensuring a crispy texture.

Now, carefully skewer the enoki mushrooms, coated in tempura flour, into the prepared chili pepper halves. They will resemble small trees.

To make the crispy batter, combine tempura flour, ice cubes, and cold water in a bowl. Mix lightly with chopsticks until just combined; avoid overmixing, as some lumps will result in a crispier batter. (Tip: The batter consistency should be slightly thinner than yogurt. This will create a light and crispy coating similar to Japanese tempura.) Spread 1 cup of breadcrumbs evenly on a plate.
Step 8
Heat about 200ml of cooking oil in a small frying pan to around 180°C (350°F). Once the oil is ready, dip the enoki mushroom-skewered chili peppers into the tempura batter, ensuring they are fully coated.

Transfer the battered enoki mushrooms to the plate of breadcrumbs and roll them around to coat them evenly with breadcrumbs. This breadcrumb layer will add extra crispiness and a fuller texture.

Carefully place the breadcrumb-coated enoki mushrooms into the hot oil and deep-fry them until golden brown and crispy on all sides. Adjust the heat as needed to prevent burning.

Once fried to perfection, remove the enoki mushroom fritters and place them on paper towels or a wire rack to drain excess oil. This step is crucial to maintain their crispiness.
