Crispy Dried Shrimp Stir-Fry: A Savory and Sweet Korean Delight
This recipe features ‘Dried Shrimp Stir-Fry,’ a popular Korean side dish made with dried shrimp. It’s a flavorful dish that’s perfect to serve with rice.
One of my husband’s favorite side dishes, this Dried Shrimp Stir-Fry is made in the style of a famous Korean chef’s recipe! It’s a delicious and easy-to-make dish that you’ll want to make again and again.
Ingredients- 1 bag dried shrimp (approx. 100g)
- A little cooking oil (generous amount)
- 2 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1 Tbsp sugar
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp water
- 1 stalk green onion
- 5 Korean chili peppers (cheongyang peppers)
- 1 Tbsp sesame oil
- 1 Tbsp corn syrup (or rice syrup)
- A little sesame seeds
Cooking Instructions
Step 1
First, gather all the ingredients for today’s dish. Prepare 1 bag of dried shrimp, 2 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp sugar, 2 Tbsp gochugaru (Korean chili flakes), 2 Tbsp water, 1 stalk green onion, 5 Korean chili peppers, 1 Tbsp sesame oil, 1 Tbsp corn syrup, and a small amount of sesame seeds. Finely chop the green onion and Korean chili peppers.
Step 2
Place the bag of dried shrimp into a dry, unheated frying pan. Stir-fry them over low heat until they become slightly crispy. This process enhances their savory flavor and prevents them from becoming too hard. Stir-fry for about 2-3 minutes, being careful not to burn them.
Step 3
Transfer the stir-fried dried shrimp to a separate bowl. In the same frying pan, add a generous amount of cooking oil and set the heat to medium-low.

Pour in 2 Tbsp of soy sauce and let it sizzle in the pan for a moment. This helps to deepen the flavor of the soy sauce.

Add 1 Tbsp of minced garlic and stir-fry until fragrant, about 30 seconds. Be careful not to let the garlic burn.

Add 1 Tbsp of sugar and stir until it combines well with the soy sauce and garlic. The mixture will start to thicken slightly as the sugar melts.

Stir in 2 Tbsp of gochugaru (Korean chili flakes) to add a spicy kick and vibrant color. Stir quickly to prevent the spices from burning.

Add 2 Tbsp of water to balance the saltiness and help the sauce come together. Stir well to combine.

Add the finely chopped green onion and stir-fry until its natural sweetness is released and it blends with the sauce.

Add the 5 finely chopped Korean chili peppers for a spicy touch. If you enjoy more heat, feel free to add extra. Their spiciness will cut through any richness.

Add 1 Tbsp of corn syrup (or rice syrup) for a glossy finish and sweetness. Stir to ensure the sauce coats all the ingredients.

Finally, return the pre-stir-fried dried shrimp to the pan. Stir-fry quickly for about 1-2 minutes, ensuring the sauce evenly coats the shrimp. Drizzle in 1 Tbsp of sesame oil for a nutty aroma and then turn off the heat.

Just before turning off the heat, or immediately after, sprinkle generously with sesame seeds for added flavor and visual appeal.
