The Golden Recipe for Stir-Fried Dried Shrimp and Garlic Scapes
Hello everyone! The weather is beautiful today, isn’t it? I recently decided to make a delicious side dish with some garlic scapes I had stored and #shrimpandgarlicscape in my pantry. Today, I’m sharing a fantastic recipe that’s perfect for your daily banchan spread. Come along and let’s make something delicious together!
Main Ingredients- Garlic scapes, 1 bowl full (approx. 200-250g)
- Dried shrimp, 1 bowl full (medium-sized, approx. 100-150g)
Seasoning (measured with adult rice spoon)- Soy sauce 4 Tbsp
- Corn syrup 3 Tbsp
- Mirin (rice wine) 2 Tbsp
- Water 3 Tbsp
- Sugar 1/2 Tbsp
- Gochugaru (Korean chili flakes) 1/2 Tbsp

Cooking Instructions
Step 1
01. Prepare and Blanch Garlic Scapes: First, wash the fresh garlic scapes thoroughly. Trim off any tough ends, and then cut them into 3-4 equal pieces, about 4-5 cm long, for easy eating.
Step 2
Blanching: Bring a generous pot of water to a boil and add half a tablespoon of salt. Carefully add the prepared garlic scapes and blanch them for only 10 to 20 seconds. The key is to keep them crisp!
Step 3
Rinse and Drain: Immediately after blanching, plunge the garlic scapes into cold water to stop the cooking process (an ice bath or cold running water works well). Then, drain them thoroughly in a colander, ensuring as much water as possible is removed.
Step 4
Check Garlic Scape Quantity: Ensure you have about one bowl full of blanched garlic scapes.
Step 5
Prepare Dried Shrimp: Have one bowl full of dried shrimp ready as well. Medium-sized shrimp tend to have the best texture when stir-fried.

02. Stir-fry Dried Shrimp: Heat a pan over low heat without adding any oil. Stir-fry the dried shrimp for a minute or two. This step helps to remove any fishy smell and brings out a richer, nuttier flavor.

03. Stir-fry with Garlic Scapes: Add the blanched garlic scapes to the pan with the stir-fried dried shrimp. Gently toss them together to combine.
Step 8
Add Seasonings: Pour in the soy sauce, water, mirin, and corn syrup. Stir everything well to coat the ingredients. Taste the mixture; if you prefer it a bit sweeter, add the half tablespoon of sugar. If you like a little heat, add the half tablespoon of gochugaru. Continue to stir-fry for another 5 to 10 minutes until the flavors meld beautifully. Your delicious dried shrimp and garlic scape stir-fry is ready!

Portioning and Serving: Transfer the finished stir-fry into a food container for storage, or serve a portion immediately. This recipe yields approximately 4 servings and takes about 15 minutes to make. It’s a perfect combination, as dried shrimp provide essential protein and calcium that garlic scapes might lack.
