  • 1 Tbsp Sugar
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Toasted Sesame Seeds
  • 1 Tbsp Sesame Oil
  • A small amount of Green Onion

Cooking Instructions

Step 1

First, prepare the dongchimi radish by washing it thoroughly.

Trim off the leafy tops and the tough stem end of the dongchimi radish. Slice the radish thinly into bite-sized, flat pieces (nabak-썰기). Rinse the sliced radish lightly in cold water once or twice to remove any dirt. Drain well in a colander; this is crucial to maintain its crispiness and prevent it from becoming watery.

Place the drained radish slices in a mixing bowl. Add 1 Tbsp of sugar and gently massage the radish with your hands (jomul-jomul). Adding sugar first helps draw out the radish’s moisture, making it tender and allowing the seasonings to penetrate better. Ensure the sugar is evenly distributed.

Next, add 1/2 Tbsp minced garlic, 1 Tbsp gochugaru (Korean chili flakes), and 1 Tbsp toasted sesame seeds. Gently mix again until well combined. You can adjust the amount of gochugaru to your preference; add more if you like it spicier.
