  • 1 cup breadcrumbs (sifted)

Prepare about 8 to 10 fresh button mushrooms. The mushrooms in the photo are brown button mushrooms, hence the color, but white ones work just as well. Larger mushrooms will look more impressive when fried.

Gently trim the stems of your cleaned mushrooms and lightly pat them dry. Place the mushrooms in a resealable bag and add 1/2 teaspoon of herb salt. Gently shake the bag to evenly coat the mushrooms. I used ‘soso salt’ from ‘Spain Table’, and the added herb flavor significantly enhanced the taste. Regular salt is fine too, but herb salt deepens the mushroom’s natural flavor after frying. Let them sit for about 10 minutes to allow the seasoning to penetrate.

After 10 minutes, you might notice some moisture released from the seasoned mushrooms. This is normal, so don’t worry. Now, add 2 tablespoons of all-purpose flour to the mushrooms. Close the bag and shake gently to ensure the mushrooms are evenly coated with flour. This step helps the batter adhere better.

Let’s prepare the egg wash for the coating. Using 2 eggs is standard, but if you have fewer mushrooms, one egg might be sufficient. If you’re concerned about leftover egg wash, feel free to adjust the number of eggs based on the quantity of mushrooms.

Crack 2 fresh eggs into a bowl and add 1/4 teaspoon of salt. Whisk the eggs thoroughly with a fork or whisk until smooth and no lumps remain. The salt helps to neutralize any eggy smell and enhances the overall flavor of the coating.

Spread 1 cup of breadcrumbs evenly on a clean stainless steel tray or a wide plate. Spreading them thinly ensures an even and generous coating of breadcrumbs on the mushrooms.

Now, it’s time to coat the mushrooms. First, dip the flour-coated mushrooms completely into the prepared egg wash. Then, immediately transfer them to the tray with breadcrumbs and coat them thoroughly.

Gently roll the egg-washed mushrooms in the breadcrumbs or press them lightly with your hands to ensure a thick, even coating. Pay special attention to coating the inner parts of the mushroom so they are fully covered. This will result in a richer, crispier texture after frying.

Now that your mushrooms are perfectly coated with breadcrumbs, they are ready for frying. The breadcrumbs look evenly applied and appealingly golden-brown, making them look delicious already!

Pour about 500ml of cooking oil into a deep pan or pot. It’s important to use enough oil so that the mushrooms are at least half submerged. Sufficient oil ensures even cooking and a crispy result.

Once the oil reaches the right temperature, begin frying. A simple way to check the oil temperature is to drop a small piece of breadcrumb into it. If it floats to the surface and bubbles gently after 1-2 seconds, the oil is ready. Carefully place the prepared mushrooms into the hot oil to fry.

As the mushrooms begin to turn golden brown in the oil, carefully flip them using chopsticks or tongs. Once one side is a beautiful golden brown, flip them to the other side and fry until evenly colored. Adjust the heat as needed to prevent burning.
