Step 1
It’s important to wash the cucumbers thoroughly. To remove any residual pesticides or dirt, wear disposable gloves over rubber gloves and gently scrub them. Washing with bare hands can be painful due to the tiny spines on the cucumber skin, so be sure to wear gloves.
Step 2
Cut the washed cucumbers into bite-sized pieces. First, cut each cucumber in half lengthwise, then cut each half in half again, resulting in quarters. This ensures the dressing coats evenly and makes them easier to eat.

Lightly pound the cut cucumber pieces using the back of a knife or a mallet (like a garlic press). Just enough to hear a ‘tap tap’ sound will slightly tenderize the cucumber, allowing it to absorb the seasoning much better. Be careful not to pound too hard, as it can release a raw taste. After pounding, slice them into desired bite-sized pieces.
