Make a sweet and sour, delicious pickle with just one cucumber! This recipe requires no pre-boiling of the brine; simply mix everything together, refrigerate, and enjoy immediately. These pickles are versatile, perfect as a side dish for rice or to complement fried chicken, burgers, and more.

Main Ingredients

  • 4 Cucumbers
  • 3 Cheongyang peppers (optional, for a spicy kick)
  • 1 Red chili pepper (for added color)

Sweet & Sour Pickle Brine

  • 500ml Cider (adds sweetness and fizziness for enhanced flavor)
  • 7 Tbsp Vinegar (adjust to taste)
  • 3 Tbsp Sugar (adjust sweetness)
  • 1 Tbsp Salt
  • 1 Tbsp Whole Peppercorns (for aromatic flavor)

Cooking Instructions

Step 1

Prepare a clean container for your pickles. Add 3 Tbsp sugar, 7 Tbsp vinegar, and 1 Tbsp salt to the container. Stir well with a spatula or spoon until the salt and sugar are completely dissolved. Ensuring the sugar and salt dissolve properly will help the pickle’s flavor distribute evenly and make them tastier.

Wash the 4 cucumbers thoroughly under running water and pat them dry. Cut them into bite-sized pieces (about 1-1.5cm thick, half-moon or round shapes). Finely chop the Cheongyang peppers and red chili pepper. The peppers can be adjusted for spiciness or used for visual appeal.

Add all the cut cucumbers and chopped peppers to the prepared pickle brine. Ensure all the ingredients are submerged in the brine.
