Cooking Instructions
Step 1
1. It’s crucial to wash the cucumber thoroughly. First, sprinkle salt on the cucumber skin and rub it vigorously to clean. This helps remove surface residues and blemishes. 2. After washing, trim the ends off the cucumber and slice it thinly on an angle, about 4-5cm long. Thin slices absorb the broth better and have a pleasant texture.
Step 2
Take the diagonally sliced cucumber and julienne it into very thin strips. Cutting them as thinly and uniformly as possible will result in a crispier and more tender texture.
Step 3
1. Wash the Korean green chili pepper, cut it in half, remove the seeds, and mince it finely. Its spicy aroma will enhance the soup’s flavor. 2. Lightly crush the sesame seeds using a mortar and pestle or a grinder; this will release a richer aroma. 3. Have your minced garlic ready.
Step 4
In a large bowl, combine all the seasoning ingredients except for the crushed sesame seeds: salt, seasoned salt, sugar, vinegar, and minced garlic.
Step 5
Pour 2.5 cups (approx. 500ml) of cold water into the prepared seasoning mixture. Stir well with a spoon until the sugar and salt are completely dissolved. Feel free to adjust the sugar or vinegar to your taste.
Step 6
Add the julienned cucumber, minced chili pepper, and minced garlic to the sweet and sour broth. Mix everything together thoroughly so the ingredients are well combined. Ensure the cucumber is submerged in the broth for best results.
Step 7
Refrigerate for at least 30 minutes to chill thoroughly. Just before serving, generously sprinkle the crushed sesame seeds on top and add a few ice cubes for an extra cool and refreshing experience.
Step 8
Serve the chilled cucumber cold soup in a nice bowl. Your delicious cucumber cold soup is ready! It’s the perfect summer dish to awaken your appetite on a hot day.
