  • 1 cucumber
  • 4 crab sticks
  • 1/4 red bell pepper

Start by preparing one fresh cucumber. Wash it thoroughly. You’ll also need 4 crab sticks and 1/4 of a red bell pepper for color.

Cut the washed cucumber into three equal pieces. Trim off both ends.

We won’t be using the seedy core of the cucumber. You can achieve a nice texture by carefully peeling the cucumber skin in strips (like peeling an apple) and then julienning it. Be cautious while cutting to avoid injury!

If you find peeling the cucumber in strips difficult, don’t worry! You can simply julienne the cucumber without peeling it first. The result will still be delicious.

Take the crab sticks and cut each one in half lengthwise. Then, gently shred them along their natural grain for a better texture.

Julienne the red bell pepper into pieces roughly the same size as the cucumber strips. This will add a beautiful pop of color to the salad.

Now, let’s make the delightful dressing for your salad! Begin by adding 3 tablespoons of glucose powder (or sugar) to a mixing bowl.

Add 1 tablespoon of persimmon vinegar for a mild, pleasant tanginess.

Since persimmon vinegar alone might not provide enough acidity, we’re adding another 1 tablespoon of brewed soy sauce vinegar. This combination creates a more complex and balanced sour flavor.
