We’re going to make a delicious, crispy cucumber and chive salad, perfect for those times when you need a refreshing dish, especially during the summer. This recipe is inspired by the style of Baek Jong-won and makes a fantastic side dish for any meal.
Step 2
First, wash the cucumbers thoroughly. Rub them gently with coarse salt to remove any dirt and ensure a clean surface. Next, cut the cucumbers into bite-sized pieces, about 2-3 cm thick. Place the cut cucumbers in a bowl and add 1/3 cup of coarse salt. Gently toss to coat the cucumber pieces. Let them sit and salt for about 15-20 minutes. This process draws out excess water and helps the cucumbers maintain their crispiness.
Step 3
After salting, rinse the cucumbers lightly under cold running water to remove the excess salt. Be careful not to rinse too much, as this can wash away the seasoning later. Squeeze out as much water as possible from the cucumbers by hand. While the cucumbers are draining, prepare the other vegetables: chop the chives into bite-sized pieces and thinly slice the onions. Slicing the onions thinly will help them absorb the seasoning well and add a pleasant texture.

In a large mixing bowl, combine the drained cucumbers, chopped chives, and sliced onions. Add the seasoning ingredients: 1/2 cup red pepper flakes, 3 tsp sugar, 3 tsp vinegar, 3 tsp fish sauce, and 3 tsp minced garlic. Gently mix all the ingredients together, being careful not to mash the cucumbers or chives. Ensure that all the vegetables are evenly coated with the seasoning.
