- 1-2 Tbsp Oyster Sauce (adjust to your preference)
- Pinch of Black Pepper
- 1 Tbsp Chili Oil
- 1-2 Tbsp Cooking Oil (e.g., Canola Oil)
- Sesame Seeds, for garnish
Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water. After washing, drain them well in a colander to prevent excess water from accumulating during cooking. Properly draining is key to achieving a crispy texture!
Step 2
Finely chop the scallions. Unwrap the crab sticks and shred them lengthwise following their natural grain. Slice the sausages into bite-sized pieces, either rounds or lengthwise, as you prefer. Feel free to get creative with the shapes!
Step 3
Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped scallions and sauté gently to release their aroma, creating ‘scallion oil’. This step significantly deepens the dish’s flavor. Be careful not to burn them as you infuse the oil.
Step 4
Once the scallions are fragrant, add the sliced sausages and stir-fry over medium heat until they are lightly golden. The rendered fat from the sausages will add a delicious richness to the dish.
Step 5
Now, add the drained bean sprouts and the shredded crab sticks to the pan. Season with 1-2 tablespoons of oyster sauce, 1 tablespoon of chili oil, and a pinch of black pepper. Feel free to adjust the seasoning amounts to your liking.
Step 6
With all the ingredients in the pan, turn up the heat to high for a quick stir-fry. Use a spatula or chopsticks to quickly toss and mix everything for about 1-2 minutes, ensuring nothing clumps together. Avoid overcooking, as it will diminish the bean sprouts’ crispiness. Transfer the stir-fried mixture to a serving plate and sprinkle with sesame seeds for a final touch. Enjoy!
