Essential Ingredients

  • 250g Corn Flakes
  • Assorted nuts (walnuts, almonds, sunflower seeds, etc.) as needed
  • Oligosaccharide and Sugar in a 3:2 ratio (e.g., 300g Oligosaccharide, 200g Sugar)
  • Sugar (used with oligosaccharide)

Cooking Instructions

Step 1

First, finely chop your assorted nuts with a knife into bite-sized pieces. If you prefer a chewier texture with more crunch, don’t chop them too finely; leave some larger pieces for texture.

Step 1

Step 2

In a pot or pan, combine the oligosaccharide and sugar in the specified 3:2 ratio. Heat over very low heat, stirring constantly, until the sugar is completely dissolved. Be careful not to burn the sugar. (Tip: For a less hard texture, especially if children will be eating them, you can slightly reduce the sugar ratio or shorten the cooking time. This 3:2 ratio generally creates a good, manageable consistency.)

Step 2

Step 3

Once the sugar has fully dissolved and formed a syrup, turn off the heat temporarily. Add the corn flakes and chopped nuts to the syrup. Gently toss to coat everything evenly. Return the pan to very low heat and stir for about 1-2 minutes. You’ll notice the mixture becoming sticky and viscous as the syrup cooks and thickens, helping the ingredients bind together.

Step 3

Step 4

Prepare a rectangular baking pan or a heatproof container by lining it with parchment paper or lightly greasing it. Pour the cooked corn flake and nut mixture into the prepared pan. Use a spatula or the back of a spoon to press down firmly and evenly, creating a flat surface. Pressing firmly will help the bars hold their shape when cut.

Step 4

Step 5

Place another sheet of parchment paper on top of the pressed mixture. Use your hands (carefully, as it might still be warm) to press down again, ensuring an even thickness. Once shaped, refrigerate the mixture for at least 1 hour, or until firm. This chilling step is crucial for easy slicing later.

Step 5

Step 6

Remove the chilled bars from the refrigerator. Using a sharp knife, cut the mixture into your desired serving sizes. If the knife sticks due to the syrup, try wetting the blade with a little water or briefly dipping it in hot water and wiping it dry for a cleaner cut.

Step 6

Step 7

Wrap each individual nut bar in parchment paper. This prevents them from sticking together and makes them convenient for storage and on-the-go snacking. Store the wrapped bars in an airtight container at room temperature or in the refrigerator. They are delicious to eat immediately or can be enjoyed over several days.
