Main Ingredients (Serves 2)
  • 1 Chicken breast (approx. 150-200g, one piece)
  • 1 bag fresh bean sprouts (approx. 270g)
  • 3 Perilla leaves
  • 1.5 to 2 Tbsp Oyster sauce
  • 1.5 Tbsp Chili oil

Garnish
  • A little Bonito flakes
  • 2 Tbsp chopped green parts of Scallion (green onion)

Cooking Instructions

Step 1

First, thoroughly wash the bean sprouts under running water. After washing, place them in a colander to drain well. Removing excess water will prevent the stir-fry from becoming watery.

Step 2

Heat a pan over medium-high heat and add the chili oil. Add the chicken breast and stir-fry quickly. Since the chicken breast is already cooked, you only need to cook it briefly until it’s lightly browned and fragrant (about 1-2 minutes).

Step 3

Once the chicken breast is lightly sautéed, add the perilla leaves, drained bean sprouts, and oyster sauce to the pan. Stir-fry everything together over high heat. Cook just until the bean sprouts begin to soften slightly (less than 1 minute) to maintain their crispiness. You can adjust the amount of oyster sauce to your preference.

Step 4

*If you prefer softer bean sprouts, you can continue stir-frying until they are wilted to your liking.* *The residual heat from the pan will continue to cook the bean sprouts, so for maximum crispiness, transfer them to a plate immediately after cooking. Overcooking can make them mushy.* *If you prefer not to cook the perilla leaves, you can skip this step and use them as a topping instead of scallions at the end.*

Step 5

Transfer the delicious chicken breast and bean sprout stir-fry to a serving plate.

Finally, sprinkle with the chopped scallions and bonito flakes according to your preference. This elevates both the appearance and flavor of your dish.
