- 300g Pancake mix (buchim garu)
- 200g Frying mix (twigim garu)
- 2 cups Water
Cooking Instructions
Step 1
First, let’s prepare the batter for your delicious pancakes. In a large bowl, measure and combine 300g of pancake mix and 200g of frying mix. Using frying mix will give your pancakes an extra crispy texture.
Step 2
Pour in 2 cups of cold water. Adding a few ice cubes is a secret trick to keep the batter cold, which makes the pancakes extra crispy! Whisk until smooth, ensuring there are no lumps. Avoid overmixing.
Step 3
Wash and prepare 1.5 zucchini.
Step 4
Peel and thinly julienne 1 medium onion. Slicing them thinly helps them cook evenly and prevents them from becoming too soggy.
Step 5
Chop about 1 bunch of chives into roughly 3-4 cm lengths. The fresh chives will add a wonderful aroma and flavor to the pancakes.
Step 6
Now, let’s prepare the fresh squid. Inside the squid’s body, you’ll find a transparent quill (cartilage); remove this.
Step 7
Peel off the skin from the squid body. You can make a small incision with a knife or simply peel it off with your fingers. If you’re cooking with children, this step can be a fun activity for them!
Step 8
Around the squid’s mouth, on the head, you’ll find many suckers. Gently brush or scrape these off, both from the top and bottom, to clean the area.
Step 9
Finally, trim away the hard part at the end of the squid’s body. Once prepped, slice the squid into bite-sized pieces, about 1-2 cm wide.
Step 10
In the bowl, combine the prepared zucchini, onion, chives, and sliced squid. Pour in just enough batter to coat the ingredients evenly. You want the ingredients to be coated, not swimming in batter.
Step 11
Finely chop 1 red chili pepper for a touch of color and mild heat. You can remove the seeds if you prefer less spice.
Step 12
Heat a generous amount of oil in a pan over medium heat. Ladle portions of the mixture into the pan, shaping them into flat, round pancakes. Cook until golden brown on one side, then flip. Arrange the chopped red chili peppers on top for color, and continue cooking until both sides are golden brown and crispy. Cooking over medium-low heat ensures the inside is cooked through without burning the outside.
Step 13
These pancakes are best enjoyed hot off the pan! They make a fantastic side dish for rice or a perfect accompaniment to a cold glass of makgeolli (Korean rice wine). Enjoy your meal today!^^
