Cooking Instructions

Step 1

This recipe works best with already cooked jokbal, especially the meaty parts. Prepare leftover jokbal from delivery or home cooking. It’s best to cut the meat into bite-sized pieces, as bones can make frying inconvenient.

Step 2

In a wide pan or deep fryer, add enough vegetable oil to generously cover the jokbal and preheat it to 180°C (350°F). (A wooden chopstick inserted into the oil should bubble immediately.) Carefully place the prepared jokbal into the hot oil and fry quickly. Since the jokbal itself is already seasoned, it can burn easily, so it’s crucial to fry for a short duration of about 3-5 minutes. During this brief frying time, the jokbal skin will become wonderfully chewy and savory, while the meat inside will absorb the flavors and become crispy on the outside.

Step 3

In a small bowl, combine 1 teaspoon of salted shrimp and a pinch of gochugaru, mixing well to create the shrimp paste dipping sauce. Once the freshly fried, crispy, and chewy jokbal is removed from the oil, place it on a paper towel to drain excess grease. Serve immediately with the prepared shrimp paste dipping sauce for a delicious fried jokbal completion. Enjoy the ultimate texture of crispy outside and chewy inside while it’s warm!
