Hotteok Dough & Filling

  • 5 small potatoes
  • 4 Tbsp potato starch
  • 1 Tbsp all-purpose flour
  • 1/3 Tbsp salt
  • 2 Tbsp sugar
  • 5 Tbsp honey

First, peel and finely chop the 5 small potatoes. Chopping them small will ensure they cook evenly in the microwave.

Add 2 tablespoons of water to the bowl containing the chopped potatoes. This step helps keep the potatoes moist during cooking.

Cover the bowl tightly with plastic wrap, then make 4-5 small slits in the wrap with a knife. This allows steam to escape safely while keeping the potatoes from drying out.

Microwave the covered potatoes for 8 minutes. Cooking time may vary slightly depending on potato size and microwave power. Pierce with a chopstick to check for tenderness – it should go through easily when done.

Once cooked, mash the hot potatoes thoroughly using a fork or a masher. Mashing while they are still hot prevents lumps and results in a smoother texture.
