Basic Croissant Batter

  • 5 sheets of rice paper
  • 3 eggs
  • 200ml milk
  • 1 tbsp honey

Let’s start by making the base custard for our croissants. In a bowl, crack 3 eggs and whisk in 1 tablespoon of honey. Add 200ml of milk and stir gently with a whisk until well combined. (Tip: Using milk will result in a softer texture. Milk is recommended over water!)

Now, it’s time to use the rice paper. Take one sheet of rice paper and dip it thoroughly into the egg mixture, coating both sides. Repeat this process for a total of 5 sheets, stacking them on top of each other after dipping. (The thin rice paper will absorb the custard and stack to act as the croissant dough.)

We’ll shape the stacked rice paper into a sailboat form. Cut the stacked rice paper diagonally into 3 equal pieces. Place the middle piece straight and long, then layer the side pieces horizontally on top to create the basic sailboat shape.

Now, roll up the rice paper pieces arranged in the sailboat shape to form a croissant. Start from the bottom and roll carefully to create a natural croissant shape.

We’ll bake the formed croissants using an air fryer. Place the croissants in the air fryer basket and bake at 180°C (356°F) for 15 minutes, or until golden brown and appetizing.
