  • 5 Potatoes (medium size)
  • 1 Tbsp Potato Starch (optional)
  • Water (as needed)
  • Cooking Oil (generous amount)
  • Tomato Sauce (to taste)
  • Mozzarella Cheese (generous amount)
  • Black Pepper (a pinch)

Cooking Instructions

First, peel and thoroughly wash the potatoes. Then, cut them into bite-sized pieces (about 2-3 cm) that are easy to scoop with a spoon and place them in a blender. Add enough water to cover the potatoes and blend until smooth and creamy. If you don’t have a blender, you can grate the potatoes finely.

Pour the blended potato mixture into a fine-mesh sieve or a cheesecloth. Press down firmly with a spatula or your hands to squeeze out as much water as possible. Removing excess water is key to achieving a crispy pancake.

Set aside the potato pulp left in the sieve for a moment. Take the potato water you squeezed out earlier and let it sit in a separate bowl for about 10 minutes. You’ll see a white layer of potato starch settle at the bottom. Carefully pour off the clear water from the top, and scrape out the settled starch from the bottom to use.

This is the precious starch extracted directly from the potatoes! Using this starch will enhance the chewy texture of the pancake.

To the potato pulp you set aside earlier, add the collected potato starch and an additional 1 tablespoon of potato starch. If you don’t have extra potato starch, using 1 tablespoon of pancake mix will give a similar texture. Mix all the ingredients well to form a batter. Add a pinch of black pepper for extra flavor.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Spread the potato batter in the pan to a thickness of about 0.5 cm and cook until golden brown and crispy on both sides. Be mindful of the heat to prevent burning.

Once the potato pancake is nicely browned and crispy, spread your desired amount of tomato sauce over it. Then, generously top with mozzarella cheese. Place it in the microwave and heat for 1-2 minutes, or until the cheese is melted and bubbly. Your delicious, chewy Potato Pancake Pizza is ready! You can garnish with parsley flakes for an extra touch.
