  • 23 Popcorn chicken balls
  • 6 Rice cakes (tteok, short-grain or long-grain)
  • 2 Brazil nuts (or other nuts)

Sweet & Savory Soy Sauce Glaze

  • 1 Tbsp Soy sauce
  • 2 Tbsp Water
  • 1/2 Tbsp Minced garlic
  • 2 Tbsp Oligodang (corn syrup or other liquid sweetener)

Cooking Instructions

Step 1

First, prepare the popcorn chicken balls and rice cakes. If your rice cakes are large, cut them into bite-sized pieces. Heat a generous amount of cooking oil in a pan over medium heat. Add the popcorn chicken balls and rice cakes, and fry until golden brown and crispy on the outside. Transfer them to a paper towel-lined plate to drain excess oil. This step ensures a wonderfully crispy exterior and a tender interior.

Now, let’s make the delicious soy sauce glaze. In a small bowl, combine 1 Tbsp soy sauce, 2 Tbsp water, 1/2 Tbsp minced garlic, and 2 Tbsp oligodang. Roughly chop the Brazil nuts (using a knife or your hands) and add them to the glaze mixture. Adding nuts provides a delightful nutty flavor and a satisfying crunch. Whisk all the ingredients together with a whisk or spoon until well combined.

Pour the prepared soy sauce glaze into a heated pan and bring it to a simmer over low heat. Cook until the sauce slightly thickens and becomes glossy. Be careful not to overcook, as the glaze can burn easily. Remove from heat once it reaches the desired consistency.
