Cooking Instructions
Step 1
Prepare the 2 dried cod pieces. First, use scissors to neatly trim off the fins. This makes the pieces easier to handle during cooking and results in a cleaner presentation.
Step 2
Cut the trimmed cod into bite-sized pieces. Aim for pieces that are not too large, so they are easy to eat and absorb the sauce well during cooking.
Step 3
For the cut cod pieces, use the back of a knife to scrape away any residual blood from between the bones. Also, remove any dark membrane. Rinse the cod thoroughly under cold running water. Drain well in a colander, then pat dry completely with paper towels. This step is crucial to prevent excessive splattering when frying.
Step 4
Prepare 1 Korean green chili pepper and 1 red chili pepper for a touch of heat and color. Remove the seeds and slice them diagonally into thin pieces. This will add visual appeal and blend well with the sauce.
Step 5
Let’s make the essential soy sauce glaze for the delicious dried cod gangjeong. In a bowl, combine 4 Tbsp soy sauce, 1 Tbsp oyster sauce, 3 Tbsp corn syrup, 1/2 Tbsp minced garlic, 2 Tbsp cooking wine (like mirin), 1 Tbsp sesame oil, and 3 pinches of black pepper. Stir well until the ingredients are fully incorporated and the glaze is smooth.
Step 6
Ensure the cod pieces are completely dry, then generously coat them evenly with potato starch. A thin, even coating of starch will ensure a crispy texture when fried. Shake off any excess starch.
Step 7
Heat about 1.5 cups of cooking oil in a deep pan or wok to around 170-180°C (338-356°F). Carefully add the starch-coated cod pieces for the first fry. Do not fry them until golden brown at this stage; aim to cook the exterior lightly for about 1-2 minutes. Double frying is key to achieving maximum crispiness.
Step 8
Remove the cod pieces from the oil after the first fry and let them drain. Do not refry immediately. Increase the oil temperature again to about 180°C (356°F). Once the oil is hot, carefully add the cod pieces back into the pan and fry again until they are golden brown and crispy, about 1-2 more minutes. This double-frying process ensures a perfectly crispy exterior and a tender interior. Place the fried cod on a plate lined with paper towels to absorb excess oil.
Step 9
Now it’s time to coat the crispy cod with the delicious glaze. In a clean pan or wok, pour in all of the prepared soy sauce glaze. Set the heat to medium and let the sauce simmer for about 30 seconds, just until it starts to bubble. Be careful not to overcook, as the sauce can burn easily.
Step 10
Increase the heat to high. Add the sliced green and red chili peppers to the simmering sauce. They will add color and a pleasant spicy aroma.
Step 11
Finally, add the double-fried cod pieces to the pan. Keep the heat on high and quickly toss the cod using a spatula or chopsticks, ensuring every piece is evenly coated with the glaze. Stir-fry rapidly for about 1 minute to allow the sauce to coat the cod beautifully.
Step 12
Your delicious Dried Cod Gangjeong is now complete! Enjoy this crispy on the outside, tender on the inside dish with its perfectly balanced sweet and savory glaze. It’s not as difficult to make as you might think, so give it a try! Your whole family will love it!
