  • Green Onion: 40g (about 1/2 stalk, sliced diagonally)
  • Sesame Seeds: 1 Tbsp (for added nutty flavor)
  • Garlic: 3 cloves (thinly sliced or minced)

Cooking Instructions

Step 1

First, thinly slice the garlic. You can also mince it finely if you prefer. Prepare about 40g of green onion and slice it diagonally into approximately 3-4cm lengths, ready to add a fragrant aroma.

Step 2

Heat the frying pan over medium-low heat and add 2 Tbsp of cooking oil. Add the diagonally sliced green onions and slowly stir-fry them, being careful not to burn, until a gentle scallion oil aroma develops. This process infuses the oil with the sweet fragrance of the green onions, elevating the dish’s flavor.

Step 3

Once the scallion oil is sufficiently infused, add the sliced garlic. Adjust the heat to prevent the garlic from burning, and sauté until the surface of the garlic turns a delicious, golden brown color. As the garlic cooks, its nutty aroma will become even richer.

Step 4

When the nutty aroma of the garlic starts to rise, add the prepared leftover jokbal to the pan. Stir-fry the jokbal along with the scallion and garlic, ensuring it doesn’t stick to the pan, allowing the flavors to meld into the meat. Stir-frying until the surface of the jokbal is slightly golden will make it even more delicious.

Step 5

Now it’s time to make the jokbal ‘crispy outside, chewy inside’! Line your air fryer basket with parchment paper. Spread the stir-fried jokbal evenly in a single layer. Place it in a preheated air fryer set to 180°C (356°F) and cook for about 5 minutes. The surface of the jokbal will become crispy, almost like it’s freshly fried.
