Ingredients

  • 240g cake flour
  • 120g unsalted butter, softened to room temperature
  • 1 large egg, at room temperature
  • 2g salt (a pinch)
  • 2g baking powder (½ tsp)
  • 100g granulated sugar
  • 50g chocolate chips

Cooking Instructions

Step 1

In a mixing bowl, place the softened butter (120g) that has been left at room temperature. Use a whisk or electric mixer to cream the butter until it reaches a mayonnaise-like consistency. Ensure it’s smooth and fluffy.

Step 2

Gradually add the granulated sugar (100g) to the creamed butter, dividing it into 2-3 additions. Mix well after each addition. This method helps the sugar dissolve better and creates a richer flavor and texture. Continue mixing until the butter and sugar mixture is light and creamy.

Step 3

Next, crack the room temperature egg (1) into a separate small bowl. You can either beat the whole egg lightly or separate the yolk and white. Gradually add the egg to the butter-sugar mixture, mixing continuously. It’s important to add the egg slowly to prevent the mixture from curdling. Mix until the egg is fully incorporated and the batter is smooth.

Step 4

In another bowl, sift the cake flour (240g) and baking powder (2g) together at least twice. Sifting aerates the flour and removes lumps, leading to a lighter cookie. Add the sifted dry ingredients to the wet batter. Using a spatula, gently fold the dry ingredients into the wet ingredients using a cutting motion. Mix only until no dry streaks of flour remain. Overmixing can result in tough cookies, so be careful not to overwork the dough.

Step 5

Finally, fold in the chocolate chips (50g) until evenly distributed. Drop rounded spoonfuls of the dough onto a baking sheet lined with parchment paper. Make sure to leave enough space between each cookie, as they will spread during baking. Preheat your oven to 180°C (350°F). Bake for approximately 13-14 minutes, or until the edges of the cookies are lightly golden brown. Baking time may vary depending on your oven. Let the cookies cool completely on a wire rack for maximum crispiness.
