This is a potato pancake made with just cheese and potatoes, without any flour. It’s incredibly crispy and delicious.

Hello everyone! Today, we’re going to make a very special and delicious ‘Cheesy Potato Pancake.’ You won’t believe how crispy and tasty it is, even without any flour! Let’s start by gathering our ingredients.

First, peel the potatoes thoroughly. You can use a peeler for easy removal of the skin. After peeling, rinse the potatoes again under water.

Once your peeled potatoes weigh about 190g, it’s time to shred them. Shred the potatoes as thinly as possible. I find a mandoline slicer very convenient for this, but if using a knife, aim for very thin strips. Here’s a crucial tip: Do NOT wash the shredded potatoes. The natural starch from the potatoes will act as a binder with the cheese, helping the pancake hold together and become extra crispy.

In a large bowl, combine the shredded potatoes, 100g of mozzarella cheese, and 0.5 teaspoon of salt. Mix everything well, ensuring the cheese is evenly distributed amongst the potato shreds. This thorough mixing is key for a well-bound pancake.
