Crispy & Cheesy Corn Dumplings: A Fun Kid-Friendly Snack
Your Kids’ New Favorite Snack! Corn & Cheese Dumplings Recipe
During the kids’ school break, I decided to make some special dumplings using their absolute favorite – corn cheese! They’re incredibly easy to make and oh-so-delicious. These dumplings offer a delightful crunch on the outside with a burst of sweet corn and gooey cheese on the inside. Perfect for a quick and tasty treat!
Ingredients- Dumpling wrappers 1/2 pack (approx. 15-20 sheets)
- Canned corn 1 can (drained, approx. 200g)
- Mozzarella cheese (or shredded cheese blend) 150g
- Rock salt 1 tsp
- Mayonnaise 2 Tbsp
- Dried parsley flakes for garnish (optional)
Cooking Instructions
Step 1
First, thoroughly drain the canned corn by placing it in a sieve. Excess water can make the filling soggy and the wrappers limp. In a bowl, combine the drained corn, shredded cheese, mayonnaise, rock salt, and parsley flakes. Mix everything together with a spatula or spoon until well combined, resembling a thick salad dressing.
Step 2
Next, place a generous spoonful of the corn and cheese mixture onto the center of each dumpling wrapper. To help seal the edges, you can lightly moisten the rim of the wrapper with a little water. Be careful not to overfill, as this can cause the dumplings to burst during cooking. Aim to fill about two-thirds of the wrapper.
Step 3
Carefully fold the dumpling wrapper in half and press the edges firmly to seal. Ensure a good seal to prevent the cheesy filling from leaking out during cooking. You can press down the center of the folded dumpling slightly to flatten it, which helps achieve a crispier texture when pan-frying. You can shape them into half-moons or any other preferred shape.
Step 4
Heat a generous amount of cooking oil in a non-stick skillet over medium-high heat. Once the oil is hot, carefully place the dumplings in the pan. The term ‘pan-frying’ here is closer to a shallow-frying method to achieve a crispy exterior. Don’t be afraid to use enough oil to coat the bottom generously.
Step 5
Even with a good amount of oil, this method uses significantly less oil than deep-frying while still delivering that satisfying crispy texture. Cook the dumplings for about 3-4 minutes per side, turning them occasionally, until they are golden brown and beautifully crisp. Adjust the heat to medium-low if they start browning too quickly.
Step 6
Serve these warm, crispy corn cheese dumplings immediately. They’re delicious dipped in ketchup or your favorite dressing, but honestly, they’re so flavorful on their own that they don’t even need a dip! They are incredibly simple to make and are sure to be a huge hit with kids, making them a perfect snack solution for busy parents.
