  • A pinch of new sugar (optional, can be omitted)
  • 2 tsp sesame seeds
  • 1.5 tsp vinegar

Cooking Instructions

Step 1

Start by thoroughly washing the celery. In a bowl, combine the celery with coarse salt and a pinch of new sugar. Let it sit for about 15-20 minutes, or until the celery slightly wilts and becomes pliable but still retains some crispness. This step is crucial for texture and flavor. (Be careful not to over-salt or let it sit too long, as it can become mushy.)

Step 2

Thinly slice the green onion diagonally. You can separate the white and green parts, or slice them together. Finely chopped green onions are also acceptable.

Step 3

Slice the onion into thin strips. Remove the seeds from the bell pepper and slice it into bite-sized strips. Using bell peppers of different colors will make the kimchi visually appealing.

Step 4

In a large bowl, combine the sliced onion, green onion, and bell pepper. Add the chili powder, soy sauce, vinegar, stevia (for sweetness adjustment), and minced garlic. Mix everything well to ensure the seasonings are evenly distributed. Taste and adjust the seasoning with salt if necessary.

Step 5

Rinse the salted celery thoroughly under cold running water to remove excess salt. Drain it very well, pressing out as much water as possible. Gently add the drained celery to the bowl with the seasoned vegetables and toss lightly to combine. Be careful not to mash the celery; you want to maintain its crisp texture.

Step 6

Finally, sprinkle with sesame seeds. Your crispy celery kimchi is ready! It can be enjoyed immediately, or allowed to ferment slightly for a deeper flavor. It’s especially delicious served alongside dumplings, creating a perfect balance of textures and tastes.
