  • 1/4 head of cabbage (approx. 250g)

Cayo-Mayo Dressing

  • 2 Tbsp ketchup
  • 1.5 Tbsp mayonnaise
  • 1 tsp sugar

Wash the cabbage thoroughly. Then, carefully cut out the tough core from the center. Next, slice the cabbage lengthwise into thin, bite-sized shreds (about 0.5cm thick). Tip! Using a mandoline slicer can help you achieve thinner, more uniform shreds, but be extremely careful to avoid cutting your fingers!

Lightly rinse the shredded cabbage under cold water. It’s best to drain the water thoroughly by placing it in a colander. This step ensures the salad remains crisp and doesn’t become soggy.

In a small bowl, combine the mayonnaise, ketchup, and sugar. Whisk well with a whisk or spoon until the sugar is completely dissolved and all ingredients are evenly incorporated to create the dressing. Tip! For a brighter, tangier flavor, add about 1/2 tsp of lemon juice or 1/3 tsp of vinegar.
