Crispy Cabbage Sandwich: Little Forest Style Upgrade
Homemade Simple and Delicious Cabbage Egg Salad Sandwich, Enhanced Version Inspired by the Movie ‘Little Forest’
Introducing a healthy and satisfying sandwich recipe made with budget-friendly cabbage and fresh eggs. Enjoy its crisp texture and rich flavor without any cooking, making it perfect for breakfast or a light lunch.
Ingredients (Serves 3)
- 6 slices of bread
- 1/4 head of cabbage (approx. 150g)
- 2 eggs
- Corn kernels (frozen or canned), as needed
- 2 imitation crab sticks (kani kama)
- Salt, to taste
- Pepper, to taste
- 1 Tbsp unrefined cane sugar
- 3 Tbsp mayonnaise (adjust to preference)
- Apple jam (optional)
- Slice cheese (optional)
Cooking Instructions
Step 1
First, prepare 1/4 of a cabbage head. Finely shred it. Cabbage is an excellent ingredient because it’s inexpensive and adds a wonderful crunch. When shredded, it looks quite generous in volume.
Step 2
Boil 2 eggs. Using my egg cooker, which I’ve used for years, makes boiling eggs incredibly convenient. Just add a little water and press the power button; it automatically shuts off after 15-20 minutes. It was a lifesaver when I was preparing for work in the mornings, and it’s still working perfectly after all this time. Hooray!
Step 3
For frozen corn kernels, microwave them for about 3 minutes to thaw. I often buy freshly boiled corn from traditional markets, then I separate the kernels, freeze them, and use them in various dishes. It’s extremely handy this way.
Step 4
Shred the 2 imitation crab sticks finely using a fork. You don’t need to shred them too finely.
Step 5
Place the boiled eggs in a mixing bowl and mash them with a fork or a mashing tool until smooth. Leaving some small chunks is also fine and adds texture.
Step 6
Season the mashed eggs with a pinch of salt and pepper. Be careful not to add too much.
Step 7
Now, add the shredded imitation crab and thawed corn kernels to the mashed eggs. Stir in 1 tablespoon of unrefined cane sugar and 2 tablespoons of mayonnaise, mixing everything thoroughly until well combined. You can also use honey instead of sugar.
Step 8
Add the shredded cabbage to the salad bowl and mix it with the prepared egg salad. If it feels a bit dry, add another tablespoon of mayonnaise to make it creamier. It’s important to maintain the cabbage’s crispness.
Step 9
While sandwiches are usually made with lightly toasted bread, this time I followed the style from the movie ‘Little Forest’ and used untoasted bread. This allows the fresh cabbage salad’s flavor to shine through.
Step 10
Generously spread the cabbage salad onto one slice of bread and wrap it tightly with plastic wrap. The salad quantity was quite large, so I ended up making more sandwiches than planned, enough for 3 slices of bread.
Step 11
For a different twist, try spreading a thin layer of apple jam on one slice of bread, then layering the cabbage salad and a slice of cheese on top. This adds a delightful sweetness and savory note.

With 1/4 head of cabbage, I made 3 delicious sandwiches. They turned out quite substantial!
