Ingredients

  • 1 handful of cabbage, thinly sliced into bite-sized pieces
  • 2 cherry tomatoes, finely chopped
  • 5 sprigs of arugula, ready to serve
  • 1 handful of mozzarella cheese, generously portioned
  • 1 handful of bacon crumbles (optional, for added flavor)
  • 2 eggs
  • 1 tortilla
  • Ketchup (for serving)

Cooking Instructions

Step 1

Start by thoroughly washing the cabbage. Pat it dry completely, then thinly slice it into fine shreds, about 0.3cm thick. Thinly sliced cabbage will become tender when cooked while retaining a pleasant crunch.

Wash the cherry tomatoes, remove their stems, and finely chop them. These chopped tomatoes will be mixed into the egg mixture for a burst of freshness.

In a bowl, crack the two fresh eggs. Add a pinch of salt to enhance the flavor. Whisk the eggs vigorously with a fork until the yolks and whites are fully combined and the mixture is smooth and frothy.

Add the thinly sliced cabbage to the whisked egg mixture. Gently toss to ensure the cabbage is evenly coated with the egg batter.

Next, incorporate the finely chopped tomatoes and the bacon crumbles (if using) into the cabbage and egg mixture.

Using a spatula or spoon, mix all the ingredients thoroughly until well combined and no lumps remain. Ensure the fresh flavors of the vegetables and the richness of the eggs are harmoniously blended.

Heat your frying pan over medium heat and add a generous amount of cooking oil. This is key to achieving a crispy tortilla! Using ample oil will result in a quesadilla that is almost fried to perfection. If you prefer a softer tortilla, reduce the amount of oil. I like a crispy texture, so I added a little more than one tablespoon.

Pour the cabbage and egg mixture into the heated pan, spreading it thinly to form a base. Once the edges begin to set, carefully place the tortilla on top. Press down gently to ensure it adheres well to the mixture and cooks evenly. Reduce the heat to medium-low to prevent burning.

It’s best to place the tortilla while the egg mixture is still slightly unset, as this helps it adhere better. If the egg cooks too much beforehand, the filling might spill out when you flip it. On this occasion, my egg filling did shift slightly upon flipping, but it didn’t affect the taste at all!

As you can see, the egg mixture shifted slightly outside the tortilla, but there’s absolutely no problem with the taste of the quesadilla! What matters most is the flavor.

Now, let the other side, the tortilla itself, cook undisturbed in the pan until golden brown and crispy. Once it’s nicely browned, sprinkle a generous amount of mozzarella cheese over one half of the tortilla.

Pile fresh arugula generously on top of the cheese. The peppery notes of arugula beautifully complement the creamy cheese, creating a balanced flavor profile. More arugula means a richer taste!

Now for the exciting part! Use a spatula to confidently and swiftly fold the quesadilla in half. A bold fold prevents the filling from spilling out. You can also lower the heat to low or turn it off briefly during this step.

As you can see in the photo, thanks to the generous amount of oil used initially, the tortilla is cooked to a beautiful crisp, almost like it’s been fried. Gently press down with the spatula to help the cheese melt evenly and secure the fold. Once the cheese has sufficiently melted, quickly flip the quesadilla to ensure both sides are perfectly golden.

When the cheese is fully melted and both sides of the tortilla are beautifully golden, your Cabbage Quesadilla is ready! Transfer the hot quesadilla to a cutting board. Let it cool for a moment before slicing it into your desired serving sizes.

I cut mine into three equal portions for easy eating. The ‘crisp’ sound it made when I cut it was truly delightful, indicating a perfectly crispy exterior and a tender interior.

Arrange the sliced quesadilla on a plate. I’ve also added some fresh vegetables and a few slices of fruit to accompany it. This is my and my mother’s breakfast today, to be enjoyed with a cup of coffee. I’ve sliced the banana and sprinkled a little cinnamon on top – a combination I highly recommend for an enhanced flavor compared to plain banana. Enjoy your delicious meal!
