  • 1/2 Red bell pepper
  • 2 sheets of Square fish cake
  • 1/2 Carrot

  • 1/2 head of Cabbage (medium size)

  • 1 Tbsp Oyster sauce
  • 2 Tbsp Sugar

Beef Seasoning

  • Pinch of Salt
  • Pinch of Black pepper

For Finishing

  • 2 Tbsp Sesame oil
  • Pinch of Toasted sesame seeds

Cooking Instructions

Step 1

First, thinly julienne the main ingredient, cabbage, about 0.5cm thick. Using plenty of cabbage will make the dish more delicious and filling.

Step 1

Step 2

Julienne the onion to a similar thickness as the cabbage. The sweetness of the onion will add to the overall flavor profile.

Step 2

Step 3

Trim the base of the enoki mushroom and separate it into smaller strands. Prepare it by separating the mushrooms into individual strands.

Step 3

Step 4

Thinly slice the square fish cake into strips, similar to how you would prepare japchae. This will add texture and make the dish more substantial.

Step 4

Step 5

Cut the chives into roughly 3-4cm lengths. The fresh aroma of the chives will add a refreshing element to the dish at the end.

Step 5

Step 6

Julienne the carrot thinly. This not only adds a beautiful color but also enriches the dish with nutrients.

Step 6

Step 7

Remove the seeds from the yellow and red bell peppers, then julienne them into similar thicknesses. This will create a visually appealing and appetizing japchae.

Step 7

Step 8

Gently pat the thinly sliced beef dry with paper towels to remove excess moisture. Then, slice it thinly into strips suitable for japchae.

Step 8

Step 9

Season the sliced beef with a little cooking wine, salt, and pepper. Gently mix to marinate. This step helps to remove any gamey odor from the beef and enhance its flavor.

Step 9

Step 10

Spread the julienned cabbage evenly at the bottom of your steamer. This layer will prevent the other ingredients from sticking to the bottom of the steamer and will help the cabbage cook to a tender consistency.

Step 10

Step 11

Arrange all the prepared ingredients – enoki mushrooms, onions, fish cakes, chives, carrots, bell peppers, and the marinated beef – attractively on top of the cabbage, ensuring they are not clumped together. Specifically, spread the beef thinly so it cooks evenly.

Step 11

Step 12

Cover the steamer with its lid and steam over high heat for exactly 10 minutes. It’s crucial to control the steaming time to ensure the cabbage and other vegetables are tender yet retain a pleasant crispness.

Step 12

Step 13

While the ingredients are steaming, let’s make the delicious sauce. In a bowl, combine 3 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp oyster sauce, and 4 Tbsp anchovy broth. Stir well until the sugar dissolves. (Using broth instead of plain water will yield a deeper flavor.)

Step 13

Step 14

After 10 minutes, open the steamer to reveal that all the ingredients are nicely cooked and releasing a wonderful aroma.

Step 14

Step 15

Carefully transfer the steamed ingredients into a large mixing bowl. Let them cool slightly, then drizzle in 2 Tbsp sesame oil for added richness and sprinkle with toasted sesame seeds.

Step 15

Step 16

Pour the prepared sauce evenly over the ingredients.

Step 16

Step 17

Now, gently toss everything together until the ingredients and sauce are well combined. Be careful not to mash the vegetables; handle them gently.

Step 17

Step 18

Your delicious Cabbage Japchae, with its wonderfully crisp texture, is ready! The natural sweetness of the vegetables and the balance of the sauce are fantastic. Enjoy this healthy delicacy that you can indulge in without worrying about calories!
