The delightful combination of a savory-sweet soy sauce base, crisp cabbage, and chewy udon noodles is simply irresistible. It’s fantastic as a snack alongside drinks or as a satisfying meal. If you don’t have green onions, don’t worry – scallions or chives work wonderfully too! Let’s get started on how to make this delicious Cabbage Stir-fry Udon.

  • 2 servings of Udon noodles
  • 3 leaves of Cabbage (approx. 1/4 head)
  • 1/4 Onion
  • A handful of Chives or Green Onions (for garnish)

Cooking Instructions

First, prepare your vegetables. You’ll need about 3 cabbage leaves, a few strands of chives (3-5), and 1/4 of an onion, or more if you prefer. Don’t overdo the quantities; a balanced amount is key.

Wash the cabbage leaves thoroughly under running water, remove the tough core, and cut them into bite-sized pieces, about 3-4 cm. Cutting them too small can result in a mushy texture after stir-frying.

Peel and wash the onion. Then, slice it into thick strips. This way, the onion will soften and release its sweetness while still retaining some texture.

Finely chop the chives or green onions you’ll use for garnish. This will add a nice color and fresh aroma to the finished dish.

Peel and mince 1 clove of garlic. The garlic aroma will greatly enhance the flavor of your stir-fry.

Fill a pot with water and bring it to a boil over high heat. You’ll need enough water to cook the udon noodles.

While the water is heating, let’s make the delicious stir-fry sauce. In a small bowl, combine 0.5 Tbsp soy sauce, 1 Tbsp oligosaccharide, 2.5 Tbsp oyster sauce, 1 tsp fish sauce, and a pinch of black pepper. Stir well until everything is fully incorporated. The fish sauce adds a wonderful umami depth.

Once the water is boiling vigorously, add the 2 servings of udon noodles. Be careful not to overcook them! They should be about 70-80% cooked when you remove them. Reserve about one ladleful of the noodle cooking water; it’s very useful for keeping the stir-fry moist and preventing sticking later on.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the pan is hot, add the chopped cabbage and minced garlic. Stir-fry until the garlic is fragrant and the cabbage begins to turn translucent.

When the cabbage is slightly softened, add the sliced onions to the pan. Continue to stir-fry until the onions are slightly cooked and their sweetness starts to emerge.

Once the onions are translucent, add the partially cooked udon noodles and the prepared sauce to the pan. Stir-fry quickly. If the mixture seems too dry or the noodles are sticking to the pan, add a ladleful of the reserved noodle water. Continue stir-frying over low heat until it’s moist. You can also add a little olive oil at this stage for extra flavor.
